


These sugar free, gluten free cup cakes are delicious and easy to make.
INGREDIENTS
4 eggs
1/2 cup melted butter
1/2 cup healthy sweetener (stevia, or monk fruit or erythritol)
2 tsp baking powder
2 tsp pure vanilla extract
1/4 teaspoon salt
2 cups of almond flour
1/4 cup sugar free chocolate chips (Lily’s brand or any other sugar free ) (optional)
PREPARATION
Preheat oven to 350 degrees. Prepare a 12 tin muffin pan for the cup cakes. The recipe makes 12 cup cakes.
In a large blender jar add the eggs, sugar and blend them together. Now add the vanilla, baking powder, salt and almond flour and then add the melted butter on the top and blend them well till a smooth batter is formed. You can remove the lid and scrape the sides of the jar to bring the batter together. Blend well.
Now to this batter add the chocolate chips. This is optional.
Now equally distribute the batter to the 12 muffin tins. Garnish a few chocolate chips on the top before placing in the oven.
Bake in the preheated oven for 20-25 minutes.
Remove , allow to cool completely and enjoy.
