

These ginger cookies made with almond butter are delicious and easy to make.
They are sugar free, gluten free and make a great holiday treat.
INGREDIENTS
1 cup of creamy almond butter
1/2 cup of healthy sweetener (erythritol, stevia or xylitol)
2 eggs
1 teaspoon pure vanilla extract
3 teaspoons of fresh grated ginger
1 teaspoon cinnamon powder
1/2 teaspoon nutmeg powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup of coconut flour
PREPARATION
Preheat oven to 350 degrees and prepare a cookie sheet with parchment paper or silicon baking sheet.
In a large bowl add the almond butter ( I usually get fresh made almond butter from the nut butter maker in the store so that there are no added ingredients in it other than almonds) . Check to see that the almond butter jar you buy from the store does not have added sugar in it.
Now add the sweetener , vanilla and ginger to the almond butter in the bowl and whisk them well with an electric mixer. Now add the eggs and beat them in with the mixer in the bowl.
In another bowl, add the coconut flour, cinnamon, nutmeg, baking soda and salt. Mix them well and then add the flour mixture to the almond butter mixture and mix them well together to make a firm cookie dough.
Now scoop a tablespoon full of dough in your had make it into a ball and then flatten it gently and place it on the cookie sheet. After you have made all the cookies, place the cookie sheet in the preheated oven for 12 minutes.
Remove from the oven and allow the cookies to cool for about 30 minutes.
The cookies are crispy on the outside and chewy on the inside. Enjoy them with a cup of your favorite tea or coffee.
