This soft marble cake is a great keto snack for anytime.
It is not only sugar free and gluten free, it is also nut free.
It just needs some simple ingredients and it is easy to make.
4 large eggs
1 tablespoon of vinegar
6 tablespoons of melted butter
1/4 cup of coconut milk or soy milk
1 teaspoon of baking powder
1 teaspoon vanilla extract
1/3 cup of coconut flour
1/4 cup + 1 tablespoon of healthy sweetener ( monk fruit or stevia or erythritol)
2 tablespoon unsweetened cocoa powder
Preheat oven to 360 degrees.
Prepare an 8X8 inch square pan to bake the cake.
In a large bowl add 4 large eggs and beat them well with an electric whisk. Now add vinegar, melted butter and coconut milk and continue to beat well.
Then add baking powder, vanilla extract, coconut flour, 1/4 cup of sweetener to the mixture and combine them till well mixed.
Divine the batter into half . In one half of the batter add the 2 tablespoons of cocoa powder and the remaining 1 tablespoon of sweetener and mix till well combined.
Now in the prepared baking dish add a layer of plain batter and then a layer of chocolate batter, and alternate them as you desire. Then gently drop the baking dish a couple of times on the counter so that the batter gets leveled.
Now take a butter knife and swirl the batter on the top to create feathered designs on the top of the cake.
Place in the preheated oven and bake for 35 minutes.
Remove from the oven, allow the cake to cool completely.
Then with a serrated knife cut into slices and enjoy with a cup of your favorite tea.
