

These delicious keto cookies are made with almond butter. They are very easy to make, they make a healthy any-time keto snack.
There is a nut butter vending machine in our local grocery store where I get my fresh made unsweetened almond butter and peanut butter. You can also get unsweetened almond butter sold in a jar in your local grocery.
INGREDIENTS
1 large egg
1/2 cup of powdered healthy sweetener (xylitol, stevia or erythritol)
1/2 teaspoon baking soda
1/4 teaspoon of cardamom powder or 1/2 teaspoon vanilla extract ( optional)
2 cups of unsweetened almond butter
PREPARATION
Preheat oven to 350 degrees.
In a large bowl add all the ingredients and mix them well with a spatula till they are well combined.
The dough becomes thick and easy to make into balls for cookies.
Prepare a baking sheet and make balls of the cookie dough and flatten it gently and place the cookies on the sheet about an inch apart from each other so that there is gap for them to expand while baking.
Place the cookies in the preheated oven for 10-12 minutes.
Remove from the oven and allow the cookies to cool completely. Enjoy them with a cup of your favorite tea or coffee!
