These flourless brownies are soft and delicious, keto brownies. They are easy to make. The recipe is very simple. It uses just 3 ingredients.
INGREDIENTS
11 oz of sugar free chocolate chips ( I buy Lily’s brand, they use erythritol as a healthy sweetener)
6 tablespoons of unsalted butter
5 large eggs
1 teaspoon of vanilla extract
1 teaspoon of instant coffee powder
1 tablespoon of powdered sweetener ( optional)
PREPARATION
Preheat oven to 350 degrees. Prepare a square 8×8 baking pan.
In a large microwavable bowl add the chocolate chips and butter and melt the chocolate chips for about 1 minute at 15 seconds interval. Remove every 15 seconds and stir the butter and chocolate chips with a spatula. Be careful not to burn the chocolate. Once the chocolate and butter are melted and come together as a creamy liquid, stop heating.
In a large mixing bowl add the 5 eggs and beat them with a electric whisk so that they become frothy.
Add the vanilla and coffee powder to the chocolate butter mixture and mix it well with the spatula.
Now pour the chocolate mixture into the egg mixture and blend everything together with the electric whisk till a smooth creamy mixture is formed. Taste the mixture, if you feel you need more sweet, then add a tablespoon of powdered sweetener and blend the mixture once more. You can also dust the powdered sweetener on top of the baked brownies.
Pour the creamy batter into the prepared baking pan and bake in the preheated oven for 33-35 minutes.
Remove , allow to cool for 15 minutes.
Sprinkle a tablespoon of powdered sweetener on the top by using a sifter (this is optional)
Cut into squares with a serrated knife. Enjoy!
