CHEESE CAKE BROWNIES – KETO

These cheese cake brownies are an excellent dessert for the holidays. They make a delicious double treat. They are keto , gluten free and sugar free. Everyone can enjoy them.

INGREDIENTS

FOR THE BROWNIE

1 cup of blanched almond flour

1/3 cup of cocoa powder

1 cup of healthy sweetener (birch bark xylitol or monk fruit sweetener, erythritol)

1 teaspoon baking powder

1/4 teaspoon salt

1/2 unsalted butter (melted)

3 eggs

1/2 cup of unsweetened chocolate chips ( Lily’s brand)

1 teaspoon of instant coffee powder ( optional)

INGREDIENTS FOR THE CHEESE CAKE

16 OZ cream cheese (room temperature)

1/2 cup healthy sweetener

2 teaspoons of vanilla extract

2 large eggs

a pinch of salt

INGREDIENTS FOR THE TOPPING

2 tablespoons of chocolate chips and 1 tablespoon of unsalted butter

PREPARATION

Preheat oven to 350 degrees.

In a large bowl prepare the brownie batter. Add the almond flour, cocoa powder, baking powder, sweetener and salt and mix them well till combined.

Now add the eggs and mix with the dry ingredients.

Add the chocolate chips to a microwaveable bowl and melt them carefully at 20 second intervals till they are well melted.

Now add the melted chocolate and the melted butter to the mixture and combine them well with a spatula.

Prepare a 8×8 baking dish and pour the brownie batter into the prepared dish.

Now make the cheesecake batter.

In a large bowl add the cream cheese at room temperature and beat it well with a electric whisk till there are no lumps. Now add the sweetener, vanilla extract, salt and the pinch of salt to the cream cheese and beat everything till a smooth creamy batter is formed.

Pour this smooth batter on top of the brownie batter in the baking dish.

Now for the topping , melt the chocolate chips with the tablespoon of butter for 20 seconds in the microwave till a smooth pourable melted chocolate is formed.

Gently dollop or spoon this liquid chocolate on top of the cheesecake batter. Then use a knife or toothpick to swirl it to form a pretty design.

Now place them in the preheated oven at 350 degrees for 30 minutes and then reduce the heat to 325 degrees and bake them for another 30 -35 minutes.

Some of you might have high efficiency oven in that case, just bake it for 10 minutes in 350 degrees and then reduce temperature to 325 degrees and bake for 30-35 minutes.

Remove the baked cheesecake brownie from the oven and allow to cool completely.

Cut into squares and enjoy!
