
This delicious double chocolate cookie will definitely be a favorite of chocolate lovers who are on keto diet.
This is a super chew, gooey chocolate cookie.
I used unsweetened chocolate chunks and chocolate chips from Lily’s brand of sugar free chocolates.


This is a simple and easy recipe.
INGREDIENTS
2 cups blanched almond flour
3/4 cup of healthy sweetener ( stevia, erythritol or monk fruit sweetener)
1/2 teaspoon baking soda ( please do not use baking powder)
1/4 teaspoon salt
1/2 cup butter melted and cooled
1 large egg
1 teaspoon pure vanilla extract
1/2 cup unsweetened chocolate chips
2 oz baking chocolate broken into chunks
PREPARATION
Preheat oven to 325 degrees
Prepare a baking sheet with silicone sheet or parchment paper.
In a large bowl add the almond flour, sweetener, baking soda and salt and whisk them together till well combined.
To these dry ingredients add the vanilla, melted butter and egg and stir well till the dough comes together. I used my clean hands to mix the dough. Now add the chocolate chips and the broken chocolate chunks to the dough and fold them into the dough.
Now make 1 1/2 inch dough balls and press them gently between your palms to about 3/4 inch thick and place on the prepared baking sheet.
The cookies will spread as they bake, so keep them far apart from each other. You can bake 6 cookies at a time.
Bake them for 15 – 18 minutes until the cookies are puffed and golden brown around the edges.
Remove from the oven, they will be very soft so allow them to cool completely before removing.
Enjoy the chew double chocolate with a cup of your favorite tea or coffee.
