CRISPY COCONUT – CARDAMOM COOKIES – KETO

It is super easy to make these cookies. They are sugar free and gluten free. Yummy snack for anytime.

INGREDIENTS

4 tablespoons of softened butter

1/4 cup of healthy sweetener (erythritol or xylitol or stevia)

1/2 teaspoon of powdered cardamom seeds

1 cup of blanched almond flour

1/4 cup of organic dried unsweetened coconut flakes (powdered)

A pinch of salt

PREPARATION

Preheat oven to 350 degrees

Prepare a baking sheet for the cookies.

In a large mixing bowl add the sweetener and softened butter and cardamom seed powder and mix them well with a spatula.

Now add the almond flour and a pinch of salt to the mixture and blend well.

Make a coarse powder of your unsweetened coconut flakes in a coffee grinder or any other blender. Add a 1/4 cup of the powder to the flour mixure.

Blend everything well with your clean hands. Now make cookie balls and flatten them between your palms and place them on your cookie sheet.

Place the cookies in the preheated oven and bake them for 16 – 17 minutes.

Remove and allow them to cool completely for 30 minutes or more till they become crispy.
