
This soft , fluffy low carb cake is very delicious and easy to make. It is a satisfying dessert for those who practice a keto diet. I used vanilla and orange extract to flavor the cake, you can use any fruit or nut flavors for your cake.
I added chopped nuts on top of my cake, you can also make a keto frosting on top of your cake or try having it with some keto ice cream.
INGREDIENTS
1/2 cup of unsalted butter softened
3/4 cup of any kind of healthy sweetener ( erythritol, monk fruit, stevia)
4 eggs
1 teaspoon pure vanilla extract
1 teaspoon of orange essence
1/2 cup of heavy cream
1 and 1/4 cup of almond flour
1/2 cup of coconut flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vinegar
1/2 cup of chopped nuts mixed with 4 teaspoons of sweetener (for the topping)
PREPARATION
Preheat oven to 325 degrees
Prepare a round 9 inch cake pan. I place parchment paper in my baking pan so that it is easier to lift the cake out of the pan. Sprinkle some water on the parchment paper and crush it and then open the paper and line the pan. It will stick to the pan.
In a deep mixing bowl add the softened butter and sweetener and blend them well with a hand mixer. Now add the eggs and beat them well into the butter mixture. Add the cream and vanilla and orange essence to the mixture and blend them well together .
Now to this mixture add the almond flour, coconut flour, baking powder, baking soda, salt and vinegar and blend them well together.
Now place the thick cake batter into the prepared cake pan and spread evenly till the mixture covers the edges in the pan. Sprinkle the top of the cake with the nut and sweetener mixture.
Now bake in the preheated oven for 55 -60 minutes until the cake is golden in the edges and firm to touch in the middle.
Remove and allow the cake to cool completely. After it cools remove from the baking pan by lifting the parchment paper up and place on your cutting board and with a serrated knife slice the cake.
Enjoy your piece of cake with a cup of coffee or tea.
You can store it in a plastic container. It can be outside for 3 days, then you can refrigerate it for a week.
