ALMOND FLOUR POORI – FRIED BREAD – KETO

Deep fried bread, called Poori was one of my favorite from childhood. But after I started my keto diet I had to avoid it since it was made with refined wheat flour.

So after much research with my keto recipes, I came up with this simple recipe to make Poories with almond flour and xanthan gum. This recipe is simple, easy and delicious. It goes well with any kind of meat or vegetable dish.

I rolled the poories with my tortilla maker press, it gives a good round shape so that the poori puffs up well.

INGREDIENTS

1/2 cup of blanched almond flour

1/4 cup of coconut flour

1 teaspoon xanthan gum

1/8 teaspoon salt

1 teaspoon oil

3/4 cup of warm water

Oil for frying

PREPARATION

In a mixing bowl add the almond flour, coconut flour, xanthan gum and salt and mix them well.

Now add a teaspoon of oil to the dry mixture and mix well.

Now slowly add the warm water till the dough comes together. It may take about 1/2 cup or a little more of warm water to make a nice smooth dough.

Allow the dough to rest for about 10 minutes. Then divide the dough into 8 equal parts.

Roll the 8 pieces of dough into smooth balls.

Use your tortilla press or simply place each dough ball between two sheets of parchment paper and roll into round flat discs with a rolling pin.

Make round flat discs with all the 8 balls of dough and place them on a plate ready to fry when the oil is hot.

Heat the oil for frying in medium high heat.

Now when the oil is hot drop each rolled dough disc individually into the hot oil and gently immerse the discs with your deep fryer ladle till it puffs up and then gently turn and fry on the other side till it is golden brown on both sides.

Fry all the rolled up discs in the same method.

Enjoy with any curry or dish of your choice.
