BREAD ROLLS – KETO

I love bread and after starting my keto diet, I missed eating bread. I tried many bread recipes. This recipe turned out very well. The same ingredients of this recipe can be used to make bread in a loaf pan and also as bread rolls in a cookie sheet. This recipe requires cheese, almond flour, coconut flour, eggs and gelatin.

There are also some options to make the bread rolls even more tastier. For those who love the flavor of garlic , you can add a teaspoon of garlic powder and a teaspoon of onion powder to the mix. Also I have noticed that if I add 1/4 cup of sour cream to the mixture the bread turns out even more softer.

INGREDIENTS

2 cups of fresh grated mozzarella cheese

2 cups of fresh grated white cheddar cheese

4 ounce of cream cheese

4 eggs

2 tablespoons of gelatin

2 1/2 cups almond flour

2 tablespoons of coconut flour

4 teaspoons of baking powder

PREPARATION

Preheat oven to 350 degrees

Add the mozzarella, cheddar and cream cheese to a microwave safe bowl and melt the cheeses, and stir and combine them. I kept them for 2 minutes in my microwave by removing and stirring them in between.

In a deep mixing bowl whisk together the eggs baking powder and gelatin powder till they become frothy. Then combine the melted cheeses to this mixture.

Now add the almond flour, coconut flour and combine them well with an electric whisk till they are combined well and form a sticky dough.

To make bread rolls allow the dough to sit for 10 minutes. After 10 minutes, take 2 tablespoons of olive oil or butter in a small bowl and grease your hand with the oil and shape the dough into balls and arrange them on a baking sheet.

Place the baking sheet into the preheated oven at 350 degrees for 20 minutes. Then reduce the heat to 325 degrees and bake for another 8-10 minutes till lightly golden brown on the top. Cool completely for 10 minutes and enjoy just plain or with butter or any kind of your favorite spread or soup.

Note: – If you want to make the dough into a loaf of bread just grease a loaf pan and transfer the batter into the pan and place in the oven for 20 minutes at 350 degrees and then reduce heat to 325 and bake for another 30 minutes. When done, the bread will be deep brown on the top. Allow to cool for an hour before removing from the loaf pan. Then turn out the loaf on a cutting board, cut and enjoy your bread.
