This ice cream is especially very creamy and soft, it does not form ice crystals.


3 cups of heavy cream

2/3 cup of healthy sweetener (birch xylitol or erythritol or stevia)

1 tablespoon of protein powder

1 tablespoon of MCT oil

1 teaspoons of gelatin powder

2 teaspoons of vanilla extract


Place 1 tablespoons of warm water in a small cup and add the gelatin crystals and stir them to bloom or soften by absorbing the warm water. Do not allow the gelatin to solidify use it when it is runny.

In a large blender jar add 1 cup of heavy cream, the gelatin, vanilla extract, sweetener, protein powder and MCT oil and blend them till well combined.

Now in a large bowl beat the 2 cups of heavy cream with an electric whisk till it gets stiff.

Pour little by little the mixture from the blender into the beaten cream in the bowl and fold them till they are all combined.

Pour in a container and keep in the freezer for 5 to 8 hours.

After 5 hours the ice-cream is soft and ready. Enjoy with your favorite berries and nuts.
