These delicious lemon cookies are very soft and have a pleasant lemon flavor.
6 tablespoons of unsalted butter (softened)
1/3 cup of sweetener (erythritol or birch xylitol)
1 tablespoon of lemon zest
1 tablespoon of fresh lemon juice
1 teaspoon of lemon essence (optional)
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking powder
2 1/2 cups of almond flour
Preheat oven to 350 degrees
In a deep bowl add the butter and sweetener and whisk them till well blended.
Now add the egg, lemon zest, lemon juice, vanilla extract, and lemon essence and blend them together.
Now add 1 cup of almond flour and salt, blend well. Then add the remaining almond flour and the baking powder and combine them to form a cookie dough.
Roll the dough into hand size balls and flatten gently and place on the prepared cookie sheet. Place it in the oven and bake for 10 minutes.
Remove and allow the cookies to cool completely. Enjoy!
