KETO BADAM HALWA (Indian sweet with Almond flour)

This is a simple East Indian sweet. Badam means almonds. Badam Halwa is a sweet paste of almonds. It is a rich sweet made during special occasion and festivals in my home town. Almonds are soaked in water, their skin is removed and they are ground to a paste to make this sweet. I loved this sweet so much, but after I started my Keto journey, I missed eating Indian sweets. I experiment and explore many sweet recipes with a keto touch. This recipe came out very well and I am happy with it. This keto version is easy to make, it takes just a few minutes.

INGREDIENTS

2 tablespoons of butter (melted)

4 tablespoons of heavy cream

1/2 teaspoon of saffron

1/2 teaspoon cardamom powder

A pinch of salt

1 cup of almond flour

3 tablespoons of granulated healthy sweetener ( I used monk fruit sweetener)

1 tablespoon of chopped roasted cashew nuts

PREPARATION

Heat a sauce pan. Warm 2 tablespoons of cream and pour into a small dish and add the saffron to it so that it soaks in the cream to release its flavor.

Now heat the saucepan, add a table spoon of melted butter, when the butter is hot, add the almond flour and fry it on medium heat till it is brown and roasted.

Now add salt and the saffron with cream to it and add the remaining two tablespoons of cream and continue to mix well till well blended and almond paste is formed.

Now add the sweetener and cardamom powder to the paste and continue to mix well. Now add a tablespoon of butter and continue to mix the paste till it is well cooked and leaves the sides of the pan easily and the halwa is formed.

Remove the pan from heat add the chopped cashew nuts and mix well into the halwa.

Serve hot or cold. Enjoy!
