
These keto chocolate chip cookies are delicious.
I used coconut oil instead of butter. The coconut oil and vanilla combination to the cookies give an amazing smell.
They taste absolutely delicious.
INGREDIENTS
3/4 cup of healthy sweetener (stevia or monk fruit)
1/4 cup of pure coconut oil
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
2 cups of almond flour
4 tablespoons of coconut flour
1/2 cup of unsweetened chocolate chips
PREPARATION
Heat oven to 350 degrees. Prepare a cookie sheet with parchment or silicone sheet.
In a deep mixing bowl add the sweetener and coconut oil and blend well with an electric whisk.
Now add the eggs to the mixture and blend with the whisk till well combined.
Now add the salt vanilla and baking soda and baking powder and mix well.
Then add the almond flour and coconut flour to the mix and whisk them all together.
It will be a crumbly dough. Add the chocolate chips to it.
With a spatula or with your clean hands mix well till a firm dough is formed.
Make fist sized balls of the dough and gently flatten to disc shape between your palms and place them in the cookie sheet.
Place the cookies in the preheated oven for 14 – 15 minutes.
Remove from oven. Allow them to cool completely for 10 minutes.
Enjoy with a cup of tea or coffee.
