
This delicious chocolate pie is made from silken tofu.
It is a keto recipe, gluten free and sugar free.
The pie crust is made with almond flour and the filling is made with silken tofu and melted chocolate chips.
INGREDIENTS
For the PIE CRUST
1 and 1/2 cups of almond flour
1/4 cup of sweetener (stevia or monk fruit sweetener)
5 tablespoons melted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
For the CHOCOLATE FILLING
12 oz silken tofu
1 and 1/2 cup chocolate chips (unsweetened)
1/2 cup healthy sweetener (stevia or monk fruit)
2 tablespoons of butter
1 teaspoon vanilla extract
A pinch of salt
PREPARATION
First prepare the pie crust, so preheat the oven to 325 degrees.
In a mixing bowl add the almond flour , sweetener and salt.
Melt the butter and add the vanilla extract to it and pour this to the dry ingredients in the bowl.
Mix well, you get a crumbled coarse dough.
Now press it firmly into a glass pie plate.
Place it in the preheated oven and bake it for 19 – 20 minutes.
Now prepare the filling. Melt the chocolate chips in a microwaveable bowl with the butter on high for 45 to 60 seconds.
Melt at 15 second intervals, remove and mix the melting chocolate and butter so that the chocolate does not burn.
Now allow the melted chocolate to cool.
In a blender add the tofu, sweetener, salt, vanilla and melted chocolate and blend well till smooth.
Pour the filling mixture into the pie crust after the pie crust is cooled.
Place it in the fridge for 2 hours. the pie will firm up.
Cut into slices and enjoy!
