I tried to substitute coconut oil for butter and made these coconut cookies.
They are easy to make and delicious They are gluten free, sugar free and dairy free.
3 tablespoons of pure coconut oil
1/4 cup of sweetener (stevia or monk fruit)
1/2 teaspoon of cardamom powder
1/4 teaspoon salt
1 cup of blanched almond flour
1 egg white
1/4 cup of powdered unsweetened dried coconut flakes
Preheat oven to 350 degrees. Prepare a baking sheet to place the cookies.
In a deep mixing bowl add coconut oil and sweetener and mix well with spatula.
Now add the cardamom powder and salt and almond flour and mix well.
You will get a crumbly dough, now add the coconut flakes and the egg white and mix well with your clean hands or with spatula. You get a good firm cookie dough.
Now make balls of cookies, flatten them between your palms and place on the cookie sheet. Place the cookies in the preheated oven and bake for 16 minutes.
Remove from oven and allow the cookies to cool for 10 minutes.
Now enjoy your delicious cookies with a cup of hot tea
