
This sugar free, keto jam is a very simple recipe.
For this recipe use raspberries that are fresh and ripe, not over ripe, soft or bruised. Good quality of the fruit will give a good color and flavor to your jam. This jam needs only 3 ingredients, raspberries, healthy sweetener (stevia, monk fruit sweetener, erythritol or birch bark xylitol) and lemon juice. Always use fresh lemon juice.
INGREDIENTS
12 0Z of fresh ripe raspberries
3/4 cup of sweetener
2 tablespoons of fresh lemon juice
PREPARATION
Wash and drain the raspberries completely.
In a large saucepan add the raspberries, sweetener and lemon juice.
Mix them well with a spatula.
Place the saucepan in low heat till the sweetener dissolves and you can see the juice separating.
Now increase the heat to boil.
Boil for 15 minutes, stirring frequently.
Now place a drop of the thickened sauce on a saucer and allow it to cool for 1 minute. After a minute if you run your finger through the cooled sauce on the plate it should wrinkle. If it wrinkles it is ready, if it is still liquid, allow it to boil for another 2 or 3 minutes and test again.
When all the water is gone and the color is bright, remove the pan from heat and allow the jam to cool for 30 minutes.
Now transfer the jam to a glass container. Make small batches and consume within a week.
Because of the sweetener the top layer of the jam gets crystallized, you can warm it in the saucepan or in the microwave for 15 seconds before spreading it on your bread.
