
These are delicious keto cookies which are crispy on the outside and soft on the inside.
I used pecan nuts with chocolate chips, but you can use any other kind of nuts that you like.
INGREDIENTS
2 cups of almond flour
3/4 cup of healthy sweetener ( stevia or monk fruit or erythritol)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon pure vanilla extract
1/2 cup of melted unsalted butter
1 egg
1/4 cup of sugar free chocolate chips
1/4 cup of chopped nuts
PREPARATION
Preheat oven to 325 degrees. Prepare 2 cookie sheets with silicon or parchment paper.
In a large mixing bowl add almond flour, sweetener , salt, baking soda and mix well.
To these dry ingredients add vanilla extract and melted butter and mix with a spatula
Then add the egg and mix everything well with your clean hands till cookie dough forms.
Take about half scoop size dough and roll them into balls and gently press them so that they have thick edges all around.
Place them in the cookie sheet with about 2 inches apart from each other.
Place them in the preheated oven and bake for 16 – 17 minutes.
Remove and allow the cookies to completely cool for about 10 minutes before removing from the cookie sheet.
If you use two cookie sheets, it is easier so that when one continues to cool, you can keep cookies in the other and bake them.
After they are cool the cookies are crispy on the outside and soft on the inside. They are absolutely delicious.
