BANANA- ALMOND FLOUR PANCAKES

These Banana Almond Flour pancakes are gluten free and sugar free. They are delicious and easy to make.

Care needs to be taken to keep the pan in medium low heat, since the pancake mixture has bananas, they have a tendency to get burnt easily.

Using a nonstick pan is easier while making these pancakes.

INGREDIENTS

2 large eggs

1 medium sized banana

2 tablespoons of sweetener (monk fruit sweetener or erythritol)

1/8th teaspoon of salt

1 teaspoon baking powder

1/2 teaspoon vinegar

2 tablespoons of coconut flour

1 cup of almond flour

3/4 cup of coconut or almond milk

1 teaspoon of pure vanilla extract

PREPARATION

In a large blender jar add the eggs and beat them well, then add the sweetener, salt, baking powder, vinegar, vanilla extract, and cut the banana into small cubes and blend them well till they form a paste.

Now add the coconut flour, almond flour, and almond milk to the blender along with the mixture and blend them all till a smooth pancake batter is formed.

Heat a non-stick flatbread pan. After the pan is heated, reduce the heat to medium low.

Slightly brush oil or spray oil on the pan and add two tablespoons of batter on the hot pan. Do not spread the batter.

Close the pancake with a lid for 2 minutes. You will see bubbles rising and breaking on the surface of the pancake creating holes. Now remove the lid and turn the pancake to the other side to cook for another 2 minutes. You can make about 12-14 pancakes with this mixture.

Your soft delicious pancake is now ready. You can enjoy it with butter or honey or your favorite sugar free syrup.
