This delicious simple chia seed pudding is an easy and excellent keto breakfast.

You can make this simple easy recipe and leave it in your fridge overnight and have it for your breakfast in the morning.
1 cup of almond milk or coconut milk
2 tablespoons of heavy cream and 1 tablespoon more
2 tablespoons of powdered healthy sweetener (erythritol of stevia)
1 teaspoon of vanilla extract
4 tablespoons of chia seeds
1/2 cup of fresh diced strawberries
Take a medium bowl with a lid that you can keep in your fridge.
Add the milk, 2 tablespoons of heavy cream, sweetener, vanilla and chia seeds in it and mix them well with a spatula till they are thoroughly mixed.
Now close the lid and keep the mixture in the fridge overnight.( You can also have it set for just an hour and enjoy it.)
In the morning remove from the fridge, mix the pudding if it is solidified add a tablespoon or more of cream and mix well till it forms a smooth pudding consistency.
Cut fresh strawberries add on top of your pudding and enjoy a healthy delicious keto breakfast. This pudding can also be had as a snack or desert. You can also add nuts and other berries of your choice to bring different flavors to the pudding.
