These delicious keto coconut cookies are for coconut lovers. They are crispy and delicious and make an any-time snack. They need just 4 simple ingredients to make.


1 cup of blanched almond flour

1/4 cup of butter at room temperature

1/4 cup of healthy sweetener (erythritol or birch bark xylitol)

1/2 cup of organic dried, unsweetened coconut flakes

1 teaspoon of vanilla extract (optional)


Preheat oven to 350 degrees.

Prepare a cookie sheet with parchment paper or silicone sheet.

In a large bowl add the almond flour, sweetener, vanilla and butter and mix them well till a thick dough is formed. Now add the 1/2 cup of coconut flakes and mix the dough well.

Make small cookie balls from the dough, and flatten them between your palms and place them on the cookie sheet.

Bake them in the preheated oven for 15 -17 minutes.

Remove from the oven allow the cookies to cool for 30 minutes and then enjoy them with your tea or coffee.
