

I love crispy cookies. So I tried making a crispy chocolate chip cookie version in keto. This recipe turned out very well. This is and eggless, keto cookie. Try it and enjoy.
INGREDIENTS
1 cup blanched almond flour
1/4 cup healthy sweetener (erythritol or stevia)
1/4 cup butter at room temperature
1teaspoon vanilla extract
1/2 cup of semi sweet chocolate chips ( I use Lily’s brand where they add erythritol and zero sugar)
PREPARATION
Preheat oven to 350 degrees
In a mixing bowl mix the almond flour, sweetener, vanilla, and butter with clean hands or with a spatula. After the cookie dough is formed add the chocolate chips and mix well into the dough.
Make small balls of the cookie dough, lightly flatten them to a disc shape and place on a prepared cookie sheet and bake in the oven for 16 -18 minutes.
Remove from the oven and allow the cookies to cool for 30 minutes till they harden up and become crispy. Enjoy!
