SOFT CINNAMON BREAD – KETO

This coconut flour cinnamon bread is so soft and delicious. It is an excellent keto snack for anytime.

INGREDIENTS

FOR THE BREAD

3/4 cup coconut flour

1/4 cup protein powder

2/3 cup granulated sweetener (erythritol)

1/4 teaspoon salt

2 teaspoons of baking powder

1/2 cup water

1/2 cup melted unsalted butter

2 large eggs

4 large egg whites

2 teaspoon vanilla extract

1 tablespoon of melted unsalted butter

FOR THE CINNAMON SUGAR FILLING

1 tablespoon cinnamon powder

2 tablespoons of granulated sweetener (erythritol)

PREPARATION

Preheat oven to 350 degrees.

In a small bowl mix two tablespoons of healthy sweetener and 1 tablespoon of cinnamon powder and keep aside for the filling.

In a large bowl add the coconut flour, protein powder, sweetener, salt and baking powder and mix well. Now add the eggs, vanilla, water, and melted butter to this mixture and beat well with an electric whisk till a smooth dough is formed.

Prepare a loaf pan, line it with parchment paper so that the bread will be easy to remove from the pan after baking.

Divide the dough into 2 or into 3 portions as you like. Place the first portion in pan and spread it evenly, now spread a spoonful of the filling mixture on top of it, then take the next portion of the dough and spread on top of the filling, then spread the filling evenly. Arrange the dough and filling in this order and completely spread the filling on top of the arrangement evenly and pour the one tablespoon of melted butter evenly on top of the bread.

Place the loaf pan in the preheated oven for 60 minutes.

Remove and allow the bread to cool completely.

Remove the bread from the pan with the help of the parchment paper and place on a plate.

Cut the bread into slices, the slices will display the filling in one or two layers as per your arrangement. Enjoy with a hot cup of tea.
