Granola is an excellent quick and convenient meal for anytime. This low carb granola is easy to make at home. Low carb granola that is available in the grocery is very expensive but when we get the right ingredients and make it at home it helps to cut down the cost, it is delicious and satisfying. Each mouthful is rich in fat and protein.


1 cup of raw almonds

1 cup of raw pecan nuts or walnuts

1/2 cup of unsweetened coconut flakes or shredded dry coconut

1/3 cup pumpkin seeds

1/3 cup sunflower seeds

1/2 flax seed meal

6 tablespoons of healthy sweetener (erythritol or stevia)

1/2 teaspoon cinnamon powder

1 teaspoon of vanilla extract

1 egg white

1/4 cup of butter melted

1/2 teaspoon of salt


Preheat oven to 350 degrees. Prepare a cookie sheet with parchment paper and keep it ready.

In a blender or food processor, add the nuts, one cup at a time and just grind for coarsely, run the blender for a second, then add the coconut flakes and blend for a second.

Now add the pumpkin seeds and sunflower seeds, sweetener, cinnamon powder, flaxseed meal, and salt and blend coarsely.

Now add the egg white, melted butter, vanilla and run the blender for a second and remove and mix them well with a spatula.

Now spread the mixture on to the cookie sheet evenly.

Bake in the preheated oven for 15 minutes.

Remove and allow the mixture to cool completely.

Break them apart and store in an air tight container. Enjoy with cold almond or coconut milk.
