
This low carb home-made batter is excellent and can be used to fry your favorite seafood, chicken and even vegetables. I made fish fry with this batter. I used the soft fish Mahi-Mahi.
INGREDIENTS
FOR THE BATTER
1/4 cup of unflavored protein powder
2/3 cups of almond flour
2 eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cumin seeds
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon cayenne powder
1/4 cup of cold water
2 pounds of fish cut into evenly sliced pieces and sprinkled with salt and 1/4 teaspoon of cayenne powder
FOR THE TARTAR SAUCE
1 cup of mayo
juice of 1 whole lemon
1 teaspoon of chopped serrano (optional)
1 tablespoon of finely chopped cilantro
salt and pepper to taste
PREPARATION
In a mixing bowl add the protein powder, almond flour, salt, pepper, garlic powder, cumin seeds, and cayenne powder and mix them well.
Now add the eggs and water to this mixture and whisk them till well blended.
Heat oil in your frying pan on medium high heat.
Dip each fish piece into the batter, allow the excess to drip off then gently lower into the hot oil. Depending on the size of your pan you need to fry the fish in batches.
Gently flip the fish over after a minute, it should be golden brown. Mahi-Mahi is a delicate fish and it need just one minute to fry on each side.
Drain the fried fish in a large bowl with paper towel and enjoy with a dip of keto tartar sauce.
For the sauce, mix the mayo, lemon juice, salt, pepper, serrano and cilantro in a bowl. Dip your fried fish in it and enjoy!
