This is a simple and easy keto cake that can be made for any occasion. Birthdays and festivals can be celebrated with this simple cake and its frosting that gives it a glamor and delicious taste.
INGREDIENTS FOR CAKE
1 cup or 2 sticks of softened butter
1/2 cup of granulated sweetener (erythritol or birch xylitol or stevia)
1 tablespoon of vanilla extract
1/4 teaspoon salt
2 teaspoons of baking powder
1 and 1/2 cup of almond flour
1/2 cup of coconut flour
INGREDIENTS FOR FROSTING
3 cups of heavy cream
8 full teaspoons of powdered healthy sweetener
2 teaspoons of vanilla, or any fruit extract, or cocoa powder. If adding cocoa powder add 2 teaspoons for 1 cup of cream.
Preheat oven to 350 degrees. Prepare an 8 inch round pan or an 8×4 inch loaf pan with parchment paper.
Now in a large blender jar add the eggs and beat them well, now add the vanilla and the softened butter and beat them all together till well blended. To this smooth mixture add the salt , sweetener, baking powder and blend again.
Now to this mixture add the almond flour and coconut flour and beat till a smooth thick cake batter is formed.
Scoop the batter into the pan lined with parchment paper. Since the batter is thick, slowly move on all sides with spatula to spread evenly.
Place in the preheated oven at 350 degrees and bake for 40 minutes.
Allow the cake to cool completely before frosting. This cake is firm and soft so you can also cut it crosswise to apply a layer of frosting like a sandwich.
Frosting is very simple, the base ingredients are just heavy cream and powdered sweetener, to which you can add your preferred flavoring.
For the frosting add the heavy cream, powdered sweetener, and flavoring or cocoa powder in a blender and blend well for a minute till the mixture becomes thick and stiff frosting. This can be easily spread on the cooled cake and then store in the refrigerator. Enjoy.
