This breakfast casserole is a keto low carb breakfast.
It is made with eggs, cheese, sausage and keto friendly vegetables.
1/2 pound of chicken sausage
1/2 cup shredded cheddar cheese
1 cup of broccoli florets
2 red peppers sliced lengthwise
1 large shallot or 1 medium red onion finely sliced
1/4 cup of heavy cream
3 tablespoons of unsweetened coconut milk or almond milk
2 tablespoons of garlic paste
1/2 teaspoon pepper powder
1 teaspoon garam masala powder (optional)
1/4 teaspoon cayenne powder or 1/2 teaspoon red chili flakes (optional)
1/2 teaspoon salt (the sausage and cheese have salt so use salt as needed)
Olive oil to saute the sausage and vegetables
Preheat oven to 350 degrees.
You need a frying pan and also a 9x 13 baking dish for the casserole.
Remove sausage from the casing and crumble and fry the pieces in a frying pan with some olive oil. When the sausage is cooked transfer it on to the baking dish.
Now in the same pan fry the shallots or red onions till they brown, then add the garlic paste and fry for some more time till the raw smell is gone. Now add the spices and salt to the mixture and add the cut vegetables and fry them till they are half cooked.
Now spread the vegetables on top of the chicken in the baking dish.
In a bowl add the eggs, cream, coconut milk and beat them well, add half of the grated cheese, mix them well and pour the mixture on top of the vegetables in the baking dish. Garnish the top with the remaining cheese.
Place the dish in the preheated oven at 350 degrees and bake for 40 minutes.
Remove and cool for ten minutes. Cut into squares and Enjoy.
You can keep the remaining in airtight container in the fridge for a week.
To reheat use a microwave or place in a pan on the stove in medium heat , close the pan with a lid and heat each slice for 2-3 minutes.
