This peanut butter fudge with cream cheese is specially delicious and easy to make.
I bought some silicon molds to set the fudge to get pretty shapes of fudge pieces for the holidays. And silicon molds are non stick and easy to set the fudge in the refrigerator or freezer.
INGREDIENTS
1/2 cup or 1 stick of butter
1/2 cup of natural unsweetened peanut butter
2 ounce of cream cheese
6 tablespoons of powdered healthy sweetener (erythritol or xylitol)
2/3 cup of protein powder
1 teaspoon vanilla extract
1/4 teaspoon salt
PREPARATION
Melt the butter and peanut butter in the microwave on high for 1-2 minutes. Remove them and whisk them well, add the cream cheese to the warm mixture and whisk well till well blended.
Now add the salt, sweetener, protein powder, vanilla to the mixture and whisk them all together till you get a smooth mixture.
Line a loaf pan with parchment paper and transfer the fudge mixture into it or use your silicon molds if you have them.
Leave the fudge in the fridge or freezer until chilled and set. If your fudge was set in a loaf pan, lift up the set fudge block with the parchment paper, place on a cutting board and with a sharp knife cut into squares. If you have them in silicon molds, remove from the molds and enjoy. Store them in the refrigerator or freezer.
