CREAM CHEESE PANCAKE & WAFFLE WITH BLUEBERRY JAM

This batter is excellent for keto pancakes and waffles.

It is a simple recipe. You can use the same batter to make pancakes or waffles if you have a waffle iron.

INGREDIENTS

3 oz of cream cheese softened

4 large eggs

1/2 teaspoon of salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 table spoon of vanilla extract

1 teaspoon cinnamon powder

1 tablespoon healthy sweetener (erythritol or birch xylitol)

3/4 cup of almond flour

PREPARATION

In a large bowl add softened cream cheese and eggs. You can soften the cream cheese in the microwave or bring it to room temperature outside the refrigerator.

Beat the eggs and cream cheese with an electric whisk till well combined. Add the vanilla extract, cinnamon powder, salt, sweetener, baking powder and baking soda and whisk them well together, The amount of vanilla and cinnamon are more than usual in order to remove the eggy taste.

Now add the almond flour and whisk the mixture to a smooth batter.

To make waffles pour about 2-3 tablespoons of the mixture into the heated waffle iron and make your waffles.

To make pancakes, heat a nonstick pan to medium high heat and lightly smear oil with a soft cloth or paper towel on the heated pan and pour about 2 tablespoons of batter and close the pan with a lid and allow the pancake to cook for 2 minutes till you see bubbles rising and breaking, creating holes in the pancake. Now remove the lid and gently lift the pancake with a spatula and turn it to the other side to cook for another minute. Your pancake is now ready.

You can have it with your favorite jam or sauces. Or make the pancakes or waffles into a sandwich with your favorite cheese, veggies or meat.

I made blueberry jam for my pancakes.

BLUBERRY JAM

This is a simple recipe I make.

INGREDIENTS

1 pound of blueberries washed and drained

6 tablespoons of sweetener (erythritol)

1/2 teaspoon salt

PREPARATION

In a large nonstick deep frying pan, add the blueberries, salt and sweetener and place the pan on medium high heat. Keep stirring now and them as the blueberries cook and mix with the sweetener. It takes about 10-12 minutes. When the mixture thickens , remove , cool and store it in a jar in the refrigerator. Enjoy with your pancakes or waffles.
