PEANUT BUTTER FUDGE

Peanut butter Fudge is one of my favorite and easy to make keto desserts.

You just need peanut butter, unsalted butter, vanilla and sweetener.

I get my peanut butter from the health section of my grocery store. They have the peanut butter maker and you can get your own fresh made peanut butter from unsalted, dry roasted peanuts.

This is a no-bake recipe and easy to make.

INGREDIENTS

2 cups of creamy peanut butter

1 stick or 8 tablespoons of unsalted butter

1 tablespoon vanilla extract

6 tablespoons of powdered sweetener (erythritol)

PREPARATION

In a large microwave safe bowl add the peanut butter and butter (cut it into tiny cubes and add it) and heat it for 1 minute. Then remove and mix them well to combine.

If you do not have a microwave you can just heat it on the stove top at medium heat mixing them well together till combined.

Now add the vanilla extract and stir well, then add the sweetener and mix till there are no lumps. The fudge mixture will thicken.

Now take a loaf pan and place parchment paper inside and pour the fudge mixture into the parchment paper. Spread the mixture evenly across the entire loaf pan.

Now leave it in the freezer for 45 minutes to set.

After 45 minutes remove from freezer. Lift the fudge with the parchment paper on to a cutting board and cut into desired shapes with a sharp knife and enjoy. You can store the remaining in the refrigerator.
