Chocolate Chip cookies also taste great with coconut flour.
Here is a simple recipe.
1/2 cup unsalted butter , softened
1/2 cup sweetener of your choice ( stevia, erythritol, or xylitol)
1/2 cup coconut flour
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
a pinch of salt
1/4 teaspoon xanthan gum
1/4 cup sugar free chocolate chips
1.Preheat oven at 350 degrees
2.In a large bowl add butter and sugar and beat them together with a mixer or a whisk, then add the egg and vanilla and beat them with the creamed butter and sugar.
3.Now add the coconut flour, salt, xanthan gum, and baking powder to the mixture and mix well with a spatula.
4. After all the ingredients are blended well add 1/2 cup of unsweetened chocolate chips and mix well into the dough.
5. Make tiny balls with your hand or a small scoop and flatten them lightly and arrange them on a prepared baking sheet.
6. Bake them in the preheated oven at 350 degrees for 12 – 15 minutes.
7. Remove from oven, allow them to cool. Enjoy.
