The peanut butter I buy is freshly made from the local grocery store. The ingredient is just peanuts and no added sugar or salt. This freshly made jar of peanut butter measures to 1 and a 1/4 cups, a little more than 1 pound.
This is a new recipe and it is very delicious. Usually peanut butter cookies are dense, so I used some added ingredients to make it lighter and more delicious.
Peanut butter is rich in fiber , healthy fats, protein, vitamins and minerals.
Now let me share the delicious way to make this cookie.
INGREDIENTS
1 and 1/4 cups of freshly made sugar free peanut butter
1 whole egg
1/2 cup of powdered healthy sweetener ( I used erythritol monk fruit sweetener)
2 tablespoons of melted butter
1/4 cup blanched almond flour
1/4 teaspoon of sea salt
PREPARATION
Preheat oven to 350 degrees
In a deep mixing bowl add all the ingredients and mix them well with a spatula or with your clean hands. The mixture will take about a minute or two to come together as a non sticky dough.
Prepare a cookie sheet and make small lime-sized balls of the dough and gently flatten them and place them in the cookie tray. Now use a fork to make an impression on the top of the gently flattened cookies just for an attractive design. Now place them in the preheated oven and allow them to bake for 10 minutes.
After 10 minutes, remove the cookies from the oven and allow them to cool completely.
Now enjoy your delicious cookies with a cup of your favorite tea.
