YUMMY CHOCOLATE FUDGE – KETO

This rich chocolate fudge with nuts is a delicious keto dessert for the holidays. It is a gluten free, no-bake simple recipe.

You can also make this without the nuts. If using nuts , use any nut or combination of nuts of your liking.

INGREDIENTS

1 and 1/4 cups of sugar free chocolate chips ( I used Lily’s brand )

1/2 cup or 1 stick of butter

1 teaspoon of pure vanilla extract

4 tablespoons of powdered healthy sweetener (stevia, erythritol or xylitol or allulose)

1/4 cup of heavy cream

1/4 cup of whole cashews

1/4 cup of whole pecans

A pinch of salt

PREPARATION

Prepare a 8X8 loaf pan with parchment paper or wax paper.

In a microwave safe bowl cut the stick of butter into small pieces and add them with the chocolate chips and microwave in 15 second increments on high for about a minute.

When the butter and chocolate have melted keep stirring them till they combine well and then add the vanilla and sweetener, salt and cream to the mixture and mix them all together till they form a smooth mixture.

Chop three whole cashews for garnish on the top.

Add all the nuts to the chocolate mixture and mix well.

Now place the chocolate mixture into the prepared loaf pan, add the chopped nuts on the top to garnish. Place the loaf pan into the freezer for an hour till it hardens up.

Now remover from the freezer and with a sharp knife cut the fudge into squares. Enjoy!
