

Sandies are one of my favorite cookies. I wanted to try making them low car/keto. This recipe turned out to be perfect. They have a crunchy texture, sweet buttery flavor and they taste so good.
INGREDIENTS
1/2 cup of pecans
1/4 cup and a tablespoon of butter softened to room temperature
1/4 cup granulated sweetener – erythritol or stevia
1 teaspoon vanilla extract
1 cup of blanched almond flour
PREPARATION
Preheat oven to 350 degrees.
Roast the pecans for 2-3 minutes in a pan, add a 1/2 teaspoon of butter and a pinch of salt and remove from heat and allow them to cool.
Now in a mixing bowl add the softened butter, sweetener, and mix them well with a electric whisk. Now add the vanilla and almond flour and mix them well together.
The mixture will be crumbly.
Now chop the nuts and add to the mixture and mix well with spatula or clean hands till a dough is formed.
Make balls out of the dough and place on a prepared cookie sheet and gently flatten them.
Place the cookies in the preheated oven and bake for 15 minutes.
Remove , allow the cookies to cool for 20 minutes. Enjoy!
