This almond flour bread is a very quick and easy keto bread recipe.

It is baked within a minute and a half in the microwave. It is very soft and fluffy. The same recipe can be made with coconut flour also.

You will need a large ramekin or a one cup size microwave safe bowl to make this recipe.


3 tablespoons of almond flour (or 1 tablespoon of coconut flour)

1 egg

1 tablespoon of healthy cooking oil (I used olive oil)

1/2 teaspoon baking powder

A pinch of salt


Beat the egg in a bowl and add the oil and beat them well together.

Now add the salt, baking powder and almond flour to the egg mixture and mix them well till well combined into a smooth batter. Lightly oil the inside of the microwave bowl.

Transfer the batter into the microwave safe bowl and microwave on high for 1 minute and 30 seconds.

Remove carefully and allow the bread to cool for 5 minutes. Now flip it over on to a plate.

You now have a soft, spongy bread. You can enjoy it toasted with some butter or just spread your favorite spreads and enjoy it as a sandwich with your cheese and vegetables.


A sweet friend asked me how she can make this almond bread in the regular oven and not in the microwave. Also she wanted to make a loaf of the bread which would be sufficient for a family of four. So to make this bread in a loaf pan in the regular oven we need to increase the quantity of the ingredients.

The ingredients would be:

12 tablespoons of almond flour

4 tablespoons of olive oil

1 and 1/2 teaspoons of baking powder

4 eggs

1/4 teaspoon of salt

Mix the ingredients, transfer to a prepared loaf pan and place in a preheated oven at 350 degrees and bake for 20 – 25 minutes.
