This is a very delicious and creamy ice cream. You can enjoy the ice cream without guilt since it is keto friendly.
2 large fresh strawberries chopped
1/3 cup of healthy sweetener (erythritol or birch xylitol)
1 and 1/2 cup of heavy cream
1 tablespoon of protein powder
1 teaspoon MCT oil (optional)
1/2 teaspoon strawberry extract (optional)
1/2 teaspoon of gelatin powder softened with 1 teaspoon of warm water (optional)
Add all the ingredients in a large blender jar and blend them together for 1 or 2 minutes till the mixture gets thick and fluffy.
MCT oil, strawberry extract and gelatin are optional. The ice cream comes out well even if you do not add them. If you are using gelatin, add the gelatin to a little warm water and stir till it dissolves and add it in the blender when it is still runny with a little bit of cream and blend and then add all the ingredients and blend them well to get a smooth creamy mixture.
Transfer to a glass jar or container and freeze for 5 to 8 hours.
Enjoy your ice cream plain or top it with nuts and berries that you like.
