
This chicken cabbage soup is very simple and easy to make.
I used a pound of ground chicken and one whole cabbage for this soup recipe.
INGREDINETS
4 tablespoons of coconut oil and 1 tablespoon of any cooking oil (I used olive oil)
1 lb of ground chicken
1 whole small cabbage shredded
1 table spoon of chicken broth powder or 1 chicken bullion
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper powder
1/4 teaspoon cayenne powder (optional)
1/3 cup of tomato puree
juice of 1/2 a lemon
4-5 cups of hot water
1 cup of finely chopped cilantro
salt to taste
PREPARATION
In a deep frying pan add 2 tablespoons of coconut oil and the shredded cabbage and saute well, till the cabbage changes color but has not lost its crispiness.
Now add the spice powders, garlic, onion, and chicken soup powder and mix them well with the cabbage. Do not add salt since the soup powder or bullion also has salt in it.
Now allow the cabbage to cook for 2 minutes in the spices , remove from the pan and keep it aside in a bowl.
Now to the hot pan add the coconut oil and olive oil and add the ground chicken , black pepper powder and a 1/4 teaspoon of salt and fry till the chicken cooks and changes white in color.
Remove from the pan and keep it aside in a separate bowl.
Now to the hot pan add the tomato puree and the cabbage and stir well, Add 4-5 cups of hot water to the mixture and allow it to boil. Now add the chicken to the mixture and mix everything and allow to boil.
Now add the lemon juice and taste the soup with a spoon and adjust the salt if needed.
Add the cup of chopped cilantro and allow to boil for another minute.
Close the lid of the pan and remove the pan from heat.
Allow the soup to settle down for 5 minutes. Then open the lid, mix well and serve the soup with any kind of keto bread. Enjoy!
