

I have never combined peanut butter and pumpkin together so far. But my son loves peanut butter and pumpkin. He suggested that I try making keto cookies with peanut butter and pumpkin. So with my knowledge of cookie baking I tried making these two ingredients together in a cookie. Surprisingly it came out very well and is very delicious.
They are easy to make. Try them in your kitchen.
INGREDIENTS:
1/4 cup softened unsalted butter
1/2 cup healthy sweetener (monk fruit sweetener, erythritol or birch bark xylitol)
Yolk of 1 large egg
1 teaspoon of pumpkin spice
1 teaspoon of vanilla extract
1/4 teaspoon salt
1/4 cup peanut butter
1/4 cup pumpkin puree
1and 1/2 cup of blanched almond flour
2 tablespoons of pumpkin seeds to decorate
PREPARATION
Preheat oven for 350 degrees. Prepare a baking sheet to place the cookies.
In a mixing bowl add the butter and sweetener and mix them well with a spatula.
Now add the egg yolk to the mixture and mix well. Then add the vanilla and pumpkin spice to the mixture and continue to mix them all together.
Now add the salt and peanut butter to the mixture and mix them well together. To this mixture now add the pumpkin puree and mix well.
To this mixture add the almond flour and continue mixing till a sticky cookie dough is formed.
Make small balls of the dough and flatten to form a cookie shape. Place on the cookie sheet. Place them about an inch apart from each other so that they will have room to expand. Decorate each cookie with a few pumpkin seeds on the top.
Place the cookies in the preheated oven for 15 – 16 minutes. Remove and cool the cookies completely. Enjoy.
You can store them in airtight containers for a week.
