These Keto chocolate cookies are delicious and will be a favorite for chocolate lovers. They are gluten free, sugar free and have the buttery chocolate taste. These are excellent desserts for any occasion.
6 table spoons of butter softened
1/4 cup of healthy sweetener (erythritol or stevia)
1 teaspoon vanilla extract
yolk of one egg
3 tablespoons of chocolate powder
1 and 1/4 cups of blanched almond flour
1/4 cup unsweetened chocolate chips ( I use Lily’s brand of chocolate chips)
Preheat oven to 340 degrees.
In a mixing bowl add the softened butter and sweetener and mix them well with a spatula till you get a creamy texture.
Now add the egg yolk and vanilla to the mixture and mix them well.
Add the chocolate powder to this mixture and blend well.
Now add the almond flour and mix all the ingredients well till a cookie dough is formed.
Then add the chocolate chips to the dough and fold it in with the dough.
Prepare a baking sheet. Take small lime sized dough and make them into your preferred shape cookies, round or square, and place them in the baking sheet. Place them an inch apart from each other.
Bake in the preheated oven for 12-14 minutes. Remove, allow them to cool well. Store them in a tight lid container. Enjoy as a snack anytime.
