INGREDIENTS
1 pound of chicken with bones or boneless. (you can also use chicken wings )
1/4 cup of olive oil
1/2 cup of tomato sauce (sugar free)
1 tablespoon of mustard
1 teaspoon of vinegar
1 teaspoon of healthy sweetener (stevia or erythritol)
2 tablespoons of garlic paste
1/4 teaspoon of cayenne powder or any hot chili powder
1/4 teaspoon of pepper powder
2 tablespoons of baking soda
salt to taste
PREPARATION
In a deep bowl add the chicken wings or pieces and add 2 tablespoons of baking soda and a cup of water and allow it to be for 5 minutes. Remove the water and wash the chicken, add salt and keep aside.
In a deep frying pan, add the oil and arrange the chicken pieces so that each piece is touching the bottom of the pan.
In medium high heat allow the chicken to fry and keep turning each piece individually on all sides so that it gets roasted evenly.
Now add the tomato sauce, mustard, vinegar, sweetener, garlic paste and chili powder in a bowl and mix till well combined. Pour this mixture on top of the chicken in the frying pan and spread evenly.
Now continue to turn the chicken till all sides get coated with the sauce mixture. Fry in medium heat till the chicken absorbs the sauce mixture and the oil comes up and gives a glossy and roasted appearance on the chicken pieces.
Remove the chicken pieces on to a plate and enjoy.
