
This is a delicious recipe, it has peanuts in it.
INGREDIENTS
1 1/2 pounds of spinach leaves chopped
1 tablespoon garlic paste
1 teaspoon cumin powder
1 teaspoon onion powder
1/2 teaspoon turmeric powder
1/4 teaspoon of cayenne powder
1 tablespoon of tomato paste
2 tablespoons of coconut oil
1 tablespoon of olive oil
1/4 cup of dry roasted peanuts
Salt to taste
PREPARATION
Heat a large pan and add coconut oil and olive oil to it.
When the oil gets warm, add the garlic paste and fry it well, now add all the spices and salt and the tomato paste to it. Fry all the ingredients well till you can see oil coming up.
Now reduce heat to medium and add the spinach leaves and allow them to reduce down. Start gently mixing with a spatula till all the leaves are combined with the spices. It takes about a minute or 2.
Now reduce the heat even more. Coarsely powder the peanuts in a mixer and add this to the spinach mixture. Move with a spatula till well combined.
Enjoy as a side dish with your lunch or dinner.
