BANANA BREAD WITH CREAM CHEESE – KETO

This is a soft and delicious, gluten free, keto banana bread.

I had some left over cream cheese in my fridge and wanted to make a banana bread with cream cheese and found a few nice recipes online.

Tried a good recipe and came up with a soft delicious banana bread.

INGREDIENTS

1/2 cup of melted unsalted butter

4 large eggs

1 teaspoon vanilla extract

2 teaspoons of banana extract

1/3 cup heavy whipping cream

1/2 cup coconut flour

1/3 cup healthy sweetener (monk fruit, erythritol or stevia)

1/2 teaspoon cinnamon powder & 1/2 teaspoon cardamon powder (optional)

1/4 teaspoon salt

2 teaspoons of baking powder

4 oz cream cheese softened to room temperature

2 tablespoons powdered sweetener

1 egg yolk

1 tablespoon coconut flour

PREPARATION

Preheat oven to 350 degrees.

Prepare a 8 x 4 inch loaf pan with greasing with some butter or oil or with parchment paper.

In a large bowl add the melted butter, vanilla, banana extract, whipping cream and eggs and beat them well with an electric whisk.

To this mixture add the coconut flour, sweetener, cinnamon powder, cardamon powder, salt and baking powder and beat them all into a smooth mixture. Keep it aside.

Now take another mixing bowl and add the softened cream cheese, egg yolk, sweetener, and coconut flour to it and beat them into a creamy mixture.

Now add half of the batter from the first bowl to the prepared loaf pan. On top of this add half of the cream cheese mixture, then add all the remaining batter from the first bowl. Now add all of the cream cheese mixture on the top and spread it gently.

Place the pan in the preheated oven and bake for 60 – 65 minutes or until toothpick comes out clean when inserted into the baked bread.

Remove from oven and cool the loaf completely for about half an hour. Cut slices with a serrated knife and enjoy!
