
This is an easy to make gluten free Pizza, excellent to enjoy with family and friends.
INGREDIENTS
2 medium sized zucchinis grated
2 eggs
2 cups of grated cheddar cheese
1/2 tablespoon of coconut flour
1 teaspoon salt
For the toppings – your favorite pizza sauce, a cup of grated mozzarella cheese.
PREPARATION
Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper.
Place the grated zucchini in a large bowl add salt and mix well. Now take a hand full of the zucchini and squeeze out the juice from it completely and place it in a large bowl. Do the same with the rest of the grated zucchini.
Now add the grated cheese to the squeezed out zucchini in the bowl, add the 2 eggs and the coconut flour to it.
Mix them well and a soft wet dough forms. Now place the dough on the prepared baking sheet and spread it out into a pizza crust about 1//4 inch thick on all sides. Keep the edges thick by shaping it with your hands, don’t let the edges become thin because they will get burnt easily.
Now place the crust into the preheated oven and bake for 20 – 22 minutes until the crust has firmed up. Remove from the oven. You can also cut and eat this as a zucchini bread or you can go ahead and make it into a pizza by adding your toppings.
Add your favorite sugar free pizza sauce and a cup of grated mozzarella cheese on top of the pizza crust, and place it again in the 400 degree oven for 10 minutes till the cheese melts.
